Joseph and Mary Van Schaick bought the property in 1972. One of their early construction projects was to add on to the existing 1-bedroom cottage, giving it a livingroom in the front, and later a second bedroom in the back, and it was called Cottage 3. Years later, about 1984, he hired someone to drag the smaller double cottage across the front yard to the left side, closer to the shore. It became the office/coffeeshop for the business, instead of using a space in the house. A piece was later added to the back of the office for a kitchen and more customer seating.
